How to make a spungy, soft victoria sandwich:

What you will need:

  • 250g caster sugar
  • 250g softened butter
  • 4 eggs, beaten
  • 250g self-raising flour
  • 1 tsp baking powder
  • 2 tbsp milk

Instructions:

1. in a bowl, mix the 200g caster sugar, 200g softened butter, 4 beaten eggs, 200g self-raising flour, 1 tsp baking powder, and 2 tbsp milk together until the batter is smooth.

2. put the mixture between two round metal tins and even the batter with your spoon.

3. Then pre-heat the oven to 190 degrees. After that bake the cake for about 20 minutes until golden brown.

4. once finished leave to cool.

5. Take the two cakes and fill one of them (on the bottom side) with buttercream and the other with jam (or strawberries), then place together and enjoy.
